The agave that is utilized to give life to our tequila, is cultivated in good agricultural soil for 8 to 10 years , until it acquires the ideal sugar content. In the elaboration process, this allows a maximum fermentation that is carried out with the yeasts of the field where it is developed.
After cooking the agave and extracting the nectar, the fermented liquid is distilled 2 times to achieve an absolute purity and to retain the essence of the agave.
Later it is aged in Oak barrels to produce our varieties: "Reposado" or "Añejo"
The distillery, Rio de Plata, is one of the oldest and most respected distilleries in Guadalajara, Jalisco, and the one in charge of giving life to the Don Diego Santa Tequila.
